Technical Sheet – Palma de Cera 2018

Grapes

  • 100% Merlot from Finca Vidal, located in Tupungato, Mendoza, at 1050 meters above sea level.
  • Grapes selected from a section of a pergola-trained vineyard over 60 years old. Cluster thinning was performed to reduce yield and increase concentration.
  • Hand-harvested in 15 kg boxes during the first week of April 2018.
  • El Niño influenced the climate. Low spring temperatures and rain with summer instability delayed ripening, but harvest conditions were ideal with no rain and stable temperatures.

Vinification

  • Fermented with 15% whole cluster.
  • Aged in French oak barrels (50% new) for 18 months.
  • Total production: 2200 bottles
  • Alcohol: 14%

Tasting Notes

  • Bright ruby color.
  • Intense and complex nose with aromas of ripe fruits. Whole cluster fermentation contributes aromas typical of organic wines.
  • On the palate, flavors of spices and fresh red and black fruits stand out. Very good acidity and balanced tannins.

Recommendations

  • Recommended serving temperature: 14–18°C (58–65°F)
  • Decant at least one hour before serving
  • We recommend using a two-prong cork puller
